This year, Jiro's sushi lost its three Michelin star status, since it is impossible for anyone to get a reservation, and Michelin only reviews restaurants that are open to the public. However, you can eat at Jiro's son's restaurant in NYC, Sushi Nakazawa,( https://www.sushinakazawa.com/ ) which was excellent IMHO, though I suspect not up to Jiro's standards.Jeff Peacheyhttp://jeffpeachey.comnoreply@blogger.comtag:blogger.com,1999:blog-7323662098477522684.post-54340105247692264492019-12-26T22:52:45.745-05:002019-12-26T22:52:45.745-05:00Ha! Yes. It&...Do you still have your first bone folder?
Yes. It's a quite common looking bonefolder with two small dye stains (red and green). It was given to me when I was still learning bookbinding, as a form of payment for an evening's help to a binder.

I now have 8-10 bone folders, some really good. However, for some peculiar reason that eludes me none of those feels as right as my first one. I still use it everyday!

Did it help guide you in your career?
Not really sure. If it did it was in a very discreet manner.

Was it as wise and snarky?
Neither.
I always felt there's some kind of calmness to it though, as if it doesn't fret or worry about what needs to be done or how. The rest of my bone folders seem less sure of themselves.Dimitris K.https://koutsipetsidis.wordpress.com/noreply@blogger.com
